Candied citrus peels

Just under the wire before Christmas, here’s an edible gift idea: candied citrus peels. Start them tonight, and they’ll be ready by Saturday.

I’ve been doing this for years, and it’s probably my greatest kitchen love-hate relationship. On the one hand, candied citrus peels are incredibly delicious, a real show-offy gift, and a great way to use up food scraps. On the other hand, making them is labor-intensive. Not difficult or complicated–just a lot of f’n work.

That said, this is the kind of elaborate kitchen project that even a rank newbie can take on. All you need is a sharp knife, a pot or two, a lot of water and some sugar, and a place to set your peels to dry. Beyond that, what matters isn’t skill so much–it’s patience.

Below is a long, elaborate explanation of how I do this. The short version is: peel yourself some citrus and cut the peels into pieces. Blanch the peels in boiling water a few times. Simmer the peels in simple syrup for about an hour. Lay the peels out to dry for a day or two. Coat the dried peels in sugar or chocolate. Done.

I usually save citrus peels in the freezer and make a big batch of candy every few months. Every time, about 24 hours into the process, I wonder why I got myself into this. Then I take a nibble, and remember: oh, yeah. It’s because candied citrus peels are amazing.

Chili in a pumpkin

God, what a year. I wish I could share some neat, precisely turned summary of everything that’s happened since I last blogged here in April. My head is a stew pot these days, full to the brim with this and that, and I’ve been trying to simmer it all together into a coherent something for months now.

On a personal scale, things have taken a happy turn towards domesticity. Sam and I got engaged in March and courthouse-married in September. We’re planning a big family-and-friends wedding for next summer (don’t ask how that’s going). We bought a townhouse–I still can’t quite believe we bought a townhouse–and moved in at the beginning of November. And we adopted a cat, who as I type this is draped full-length across my lap, purring his glossy black head off.

Meanwhile, of course, the world around us swerved in a scary direction. Our personal happiness has been complicated by fear, anger, frustration, and sadness. I was mostly holding it together until the night of the US elections, but the result of the presidential race cracked me wide open. I’ve made my political opinions clear on this blog before, and what happened on November 8th was the worst of a worst-case scenario. It also exposed some fraying ends in my mental health that I’d been trying to ignore for a while. Like many people, I suspect, I’ve spent the past month and a half relying on a mix of therapy and home-grown self-care to keep afloat.

As usual for me, the home-grown self-care includes lots of cooking in our new kitchen. The weekend after the election, we invited friends over and fed them lasagna. I’ve been batch cooking and freezing lots of kitchen-sink stuff–soups, stews, and casseroles. And I got fancy one night and baked some chili in a pumpkin, a warming seasonal treat for Sam and me. This isn’t going to resolve the topsy-turviness of the world, but it’s nourishing, absorbing, and even kind of fun–just what I need these days.

Three-bean pumpkin chili

This chili started with a not-so-spectacular sugar pumpkin. It arrived in our CSA, cute as a button, and I could tell as soon as I picked it up that it wasn’t a winner. It felt light for its size, and a good pumpkin should feel heavy. When I roasted and pureed it, my instincts were confirmed: the flesh was starchy rather than sweet, and the pumpkin flavor was muted. I’d been planning to make pie, but I knew at first taste it’d be a dud.

Still, the puree had some of the lovely earthiness I expect from freshly roasted pumpkin. What about a savory use? I’d been to the Half Moon Bay Pumpkin Festival a couple weeks before and tried pumpkin chili for the first time. For something sold out of a concession tent in a styrofoam bowl, it was pretty good–the pumpkin made a nice match for the beany warmth of the chili. But I wished with every spoonful that it was spicier, gutsier, more like my favorite bean chili. So when I found myself with a batch of boring pumpkin puree, I decided to try marrying the two chilis.

If it’s possible, I think I like this version even better than the original I based it on. The pumpkin gives the whole thing some backbone, adding sweetness and depth to balance the intense smoky heat. It also helps thicken the chili, creating a rich gravy-like sauce. The chili is ready after as little as an hour of simmering, but if you have the time, let it go for closer to three hours–the long simmer really takes the flavor from good to glorious. The whole thing is wonderfully rib-sticking, perfect for chilly nights like the ones we’ve been having in the Bay Area recently.

This is fabulous with any kind of pumpkin, homemade or canned. I know I’m not the only one to end up with a bland roasted pumpkin, and this is the perfect use for less-than-stellar puree. I ended up adding a bit of sugar at the end to compensate for the lack of sweetness in my pumpkin; this is totally a taste-and-adjust situation. Or you could just use canned puree, which provides plenty of sweetness and makes this a meal you could whip up from the pantry.

Thai curry butternut squash soup

I’ve had a couple tubs of Thai curry paste kicking around in my fridge since the summer. But when butternut squash came into season this year, I started putting them into heavy rotation. I love butternut squash soup as it is, but lately I’ve been liking my winter squash on the spicy side. So I make a very simple soup–just leeks, garlic, ginger, and squash, plus enough broth to make it soupy–and add a little dollop of curry paste. Squash loves curry in all forms, and its sweetness really welcomes the spiciness of Thai curry. It makes for a really terrific soup.

I’ve used red and green curry here, and they were both great. The red curry is a cleaner, sourer heat, and I find I need a little less paste to do the job. Green curry is richer, darker, maybe slightly less spicy, and I use a little more of it to really zing. In either case, the effect is both surprising and subtle: lots of fire up front and a quiet thrum of curry in the background.

The soup is nice enough on its own, but adding a little pile of fried shallots to each bowl really makes it special. Pureed squash can be a bit sugary and boring on its own, and the fried shallots add a lovely crackly-crisp texture and bittersweet contrast that I just love. If you’re serving the whole batch of soup at once, I’d suggest frying all the shallots right in the soup pot, then using the shallot-infused oil to make the soup. But if, like me, you like making soup ahead of time and freezing it for later, just fry up a little batch of shallots whenever you’re ready to eat.

I’m not normally one for adding cream to pureed soups, but this soup really benefits from something rich stirred in at the end. The curry paste I use is very spicy, and it needs a bit of fat to tame it so that the other flavors come through. Coconut milk is the obvious choice, but I don’t always want to open a whole can just to use a drizzle. I’ve finished this soup with different dairy and non-dairy milks, depending on what was in my fridge at the time, and it comes out great every time. The recipe includes a bunch of options; use what you like, or what you’ve got on hand. It’s that kind of soup.

Edamame hummus

I don’t often find inspiration in airplane food. But a few months ago I was on a Virgin America flight, hungry and fresh out of snacks. I ordered one of their cheese-and-cracker boxes, which came with a little tub of edamame hummus. I didn’t have high hopes, but the hummus was surprisingly great: smooth and solidly garlicky, like any good hummus should be, but lighter and more grassy. By the time I reached the bottom of the container, I was kicking myself for not having thought of it sooner.

It seems so simple, right? Just replace the chickpeas in a traditional hummus with cooked, cooled edamame. Ha! If only it were that easy. Trying to recreate that little tub of airplane hummus has taken me weeks and caused at least one tantrum. Turns out that frozen, thawed edamame don’t like to blend smooth, at least not without a lot of persuasion. It took at least three failed batches to produce a good one, but I finally got it down–a smooth green paste with the flavors of soy, lemon, tahini, and raw garlic in balance.

It all came down to the technique, and three things seem to have made the biggest difference. First, boil the frozen edamame for long enough, until the beans have lost lost their last hint of chalkiness. Second, add the edamame to the food processor in two or three batches, and make sure each addition is pureed as smooth as possible before adding the next. Third, and perhaps most importantly, puree everything for a good long while; I suggest letting the machine run for at least 30 seconds every time you add something, and let it run for a good solid minute or two once everything is in.

As with any hummus, the proportions here are entirely to taste. I like a strong but not antisocial garlic kick, a lot of lemon, and a ludicrous amount of black pepper. I like my hummus thinned with just a little bit of water, enough to make it scoopable but not saucy. I like to keep the olive oil out of the processor and drizzle it on just before serving, so that the flavor is fresh. And though I’m not usually one for food styling, I like a little dusting of something red on top–I believe sumac is traditional, but for my nonconformist green hummus, smoked paprika is just lovely.

Smoky three-bean chili

I’m normally pretty bad at resisting the lure of processed food. (I’m currently typing this blog post with one hand and eating honey mustard pretzels with the other.) But there is one consistent exception. One of my favorite food websites, The Kitchn, recently ran a blog post titled “How My Freezer Replaces Canned Soups.” I read it and found myself nodding vigorously the whole time. I may be pretty lazy most days, but I’ve pretty much stopped trying to convince myself that a can of soup is a satisfying dinner. It’s freezer soup all the way these days.

I’ve written about this before–how I love stocking my freezer with the building blocks of meals. It’s a habit I got into when I was living alone, working long days and commuting over an hour each way. At any given point, my freezer usually has some homemade chicken or turkey stock; a couple different kinds of soup, stew, or curry; and a double batch of tomato sauce. (Lately I’ve been adding little containers of sweet potato filling to my stash as well.) If I remember, I’ll take a portion out of the freezer the night before I want to eat it and let it partially thaw in the fridge; if I forget, I’ll run hot tap water over the frozen container just until the contents release from the sides. It takes nearly as little time to reheat frozen soup as canned, and it’s just as quick to eat.

This is the point at which my boyfriend would accuse me of being philosophically opposed to canned soup, and claim that I’m judging him when he chooses to eat it. That’s really not it at all, though; if it works for Sam as a quick and filling meal, then I’ll happily keep cans of his favorite soups in the house. But for me, canned soup no longer really registers as food. When I eat a can of soup for dinner, I’m never really full afterward; my body doesn’t seem to register it as a meal, and I find myself hungry again in less than an hour. It’s just so much more filling and satisfying to eat something I made myself and tailored to my own tastes.

This chili is a great example. I’ve had bean chili out of a can more times than I can count, and most of the time it’s perfectly okay. But to have my very own three-bean chili squirreled away means I’ll actually enjoy the meal when I heat it up. This is a chili made to my specifications: smoky and brick-red, studded with chunks of sweet potato and shot through with enough heat to make my nose run. I froze some leftover cornbread alongside, so that I could have a wedge of something crumbly to stick in my bowl. I also love adding some big chunks of avocado and a scattering of scallions on top, for buttery smoothness and oniony crunch. But even without the extra toppings–even just scraped out of a freezer container and microwaved–this chili is miles away from the stuff in the can.

Stuffed sweet potatoes with chipotle black beans and greens

Most of the recipes I post on this blog are one-offs. They’re things I dream up, cook, photograph, eat, enjoy, and then never make again. But every so often a new recipe is so simple, so tasty, and so adaptable that it wriggles its way into my regular rotation and lives there for months before it ends up here. This is one of those.

I got the idea for these stuffed sweet potatoes from a brilliant recipe over at The Kitchn. The basic premise is this: you scrub and roast a few sweet potatoes until they’re squishy all the way through. (Use small sweet potatoes, since they’ll cook more quickly and give a better flesh-to-filling ratio.) Sweat an onion, garlic, and a few flavorings in oil, then add a bunch of chopped greens and a splash of some flavorful liquid. Let the greens wilt for a few minutes, then stir in a drained can of beans and warm the whole thing through. Cut a slit in each sweet potato, drizzle the flesh with oil or butter, and pile it high with the filling. Grab a fork and a steak knife, and devour, skin and all.

That’s the outline, and I’ve had a lot of fun filling it in. Sweet potatoes need strong flavors to cut through their baby-food sweetness, and the best fillings I tried are tangy, smoky, and spicy all at once. The original recipe used white beans, shallot, rosemary, fresh lemon, and chile flakes. I’ve also done a Spanish-inspired version, with chickpeas, sweet onion, smoked paprika, and preserved lemon. But this version is my favorite so far: black beans, red onion, chipotle, and lime. Based on a few rounds of trial and error, I recommend using a bit more chipotle than you might otherwise like; even if the filling is searingly spicy when you taste it from the pan, the sweet potato will tromp all over it. Be brave.

One other great thing about this recipe: it’s made to be made ahead. You can freeze the filling in portions, and bake the sweet potatoes a few days in advance; just reheat as many portions as you need in the microwave. During the last couple months of 2014, when I was commuting two hours each way to work, I’d come home and throw together a potato as a late dinner. Since New Year’s, I’ve been working from home, and eating these as a hearty desk lunch. And if I ever burn out on this flavor combination, I’ll just start experimenting with others.

Green vegetable soup with miso

One of the first things Sam and I did after we got the keys to our new place was to sign up for a CSA membership. It’s been great fun so far, having a big box of exuberantly dirty produce show up quietly on our doorstep every other week. We stuff it all into the fridge, and then methodically cook or snack on it for the next fourteen days. Normally I relish this kind of cooking challenge–being handed a bunch of ingredients and told, “Go!” But, if I’m being honest, my creativity has been wearing a little thin.

So this recipe is a case of extremely fortunate timing. Last Tuesday, I opened our CSA box to find, among other things, a huge bunch of dinosaur kale, three bundled broccoli heads, a bunch of gorgeous carrots, and a lemon. On Wednesday, I opened up my RSS reader to find a Food in Jars post with a soup recipe calling for kale, broccoli, carrot, and lemon. All it took was putting two and two together, and I had lunch for the rest of the week.

Marisa from Food in Jars calls this “hippie soup,” which seems accurate. For one thing, it starts by boiling vegetables instead of sweating them in oil. You just toss a big pile of greens and herbs, an armful of broccoli florets, some alliums, and a grated carrot into a pot with water, and cook everything until it’s blendable. The recipe called for nutritional yeast, which I didn’t have and don’t intend to buy. But I had some white miso in the fridge, and figured that adding it would give the soup body and savory saltiness. I also tweaked the ingredients a bit based on my mood and the contents of the fridge, swapping scallions for onions and skipping the spinach in favor of more kale. The soup came out vividly Christmas-green, and the flavor was surprisingly complex–I was worried it’d be bitter, but it was mellow and herbal instead. It definitely tasted “good-for-you” green, but in the best way. (I suppose this is how people feel about green smoothies, but I like this soup way better than any green smoothie I’ve ever had.)

Normally, when I write recipes, I try to give approximate weights and volumes for things like “a bunch of kale” or “the juice of a lemon.” But I’m not doing that here, because precision really, really does not matter with this soup. This kind of recipe begs to be fiddled with, and the greens and herbs are totally interchangeable. I used kale and parsley, but this recipe is a great use-up for whatever greens and leafy herbs you have around–chard, spinach, radish greens, beet greens, turnip greens, collards, carrot tops, cilantro, arugula, watercress, etc. You want about half the mass of the soup to be leafy greens and herbs of some kind, and the other half to be broccoli, scallions, carrot, and garlic. Beyond that, go nuts.

White bean and tomato soup

Well. That was an adventure.

Back in August, I wrote about being overwhelmed and making jam. Sad to say, the jam-making tapered off soon afterward, but the being overwhelmed continued for a while. In the four months since I last blogged, I’ve been working through a little cascade of life changes. I moved in with my boyfriend. I quit my job. I started a few tentative steps along a new career path. I’ve spent an awful lot of time lately unpacking boxes and sending out applications and jumping on every networking happy hour invite that comes my way, all while slogging through a particularly grey bout of SAD. It’s been a challenge.

But things are settling now. The move, at least, is done. We’re slowly making our new place into a home. And as a big part of that, I’ve been cooking almost every day. Our new kitchen may be tiny, but it’s getting a workout.

The very first thing I cooked, the day after we moved in, was a pot of my grandmother’s bean soup. This is one of those recipes that speaks instant comfort to me, that tastes like winter and rain and the holidays. I can picture my grandmother standing at the stove, with a stained apron tied over her lavender sweat suit, wearing a pair of bedroom slippers that might be as old as I am, stirring an enormous pot of beans and tomatoes. This was a staple every Thanksgiving, and often on Christmas Eve (my aunt’s birthday) as well. It’s simple, nutritious, and freezes like a dream. It felt like the perfect thing to make to turn our new apartment into a home.

This is one of those soups that’s so much more than the sum of its parts: dried white beans, soaked and simmered until they’re starchy and tender, mixed with a sauteed mirepoix and some diced tomatoes. Using dried beans makes the broth fragrant and thick, and cooking the vegetables down into a sauce before adding them to the pot makes the whole thing deep and resonant. Then there are the finishing touches: a spoonful of cooked orzo and a drizzle of olive oil to top off each bowl. The orzo must be cooked separately, rather than boiled it into the soup itself, so that it stays firm and toothsome rather than relaxing into the broth. And the olive oil adds fruitiness and gloss to the bowl, making it vivid and hearty all at the same time. This is how I ate soup as a child, and how I ate it that night in our new home, staring down the barrel of a new stage of adulthood and willing myself to be ready.

Apricot jam

“I am overwhelmed.” It’s a sentence that’s been floating in and out of my consciousness a lot lately. I hear it, clearly, in my own voice, echoing in the windy rush of everything going on in my head. Scrambling at work to hold on to every last balloon string; churning at home to keep up with chores and groceries; bouncing through weekends from parties to game nights to family gatherings to dinners out. “I am overwhelmed.”

I’m not a high-energy person. I’m a deliberate thinker, a night owl, a long sleeper. So I don’t feed off of this kind of stuff. It grinds me down. I’m not really sure what to do about it, since I can’t give in to the urge to lock the door, turn off my phone, and hibernate for a week. So I’m trying to find and open my release valves, and manufacture projects for myself that will let out some of the steam. More and more, I’m realizing that jam-making is one of those valves for me.

A few weeks ago, my neighbor Jess and I got together after work for a Monday night canning session. I had a big haul of apricots from a friend’s tree, so ripe and ready that they were disintegrating in the bag. We threw them in a pot with a whole lotta sugar and some lemon juice, and cooked them down into a chunky, spreadable goo. Then we threw some jars in the oven, boiled some lids and rings, and processed everything a jar or two at a time in my little mini-canning pot. No flash, no fuss, no extra herbs or spices or tea leaves or booze; apricot jam doesn’t need any of that. It’s absolutely incredible when it’s simple like this, treacle-sweet and fragrant, cheerful and familiar. It’s an old-fashioned food, apricot jam, and that stodginess seems to suit me right now.

At one point while transferring jars in and out of the hot water, I snapped my tongs closed on my finger. The next day I had an irregular reddish bruise that engulfed most of my fingertip. It was tender but not painful, and I could look at it for several days as a reminder that “I am overwhelmed” doesn’t need to be my default state. There are still a lot of balloon strings to hold onto, a lot of chores, a lot of social obligations, but sometimes it’s necessary to shut all that out and just make something good to eat.
